Why Water Minerals Matter for Coffee

Magnesium, calcium, and bicarbonates act like a volume dial for different taste compounds. Instead of altering the physical extraction process of the coffee grounds, Apax Lab mineral concentrates act like a liquid seasoning for your brewed coffee. They change how your palate perceives brightness, weight, and texture, allowing you to fine-tune your morning brew with absolute precision.  


Meet the Apax Lab Lineup

Apax Lab uses high-purity, analytical reagent-grade (AR) minerals dissolved in demineralised water. The Core kit (available in 100mL bottle sizes or 20mL bottle sizes) consists of three primary profiles designed to target specific elements of your cup:  

  • TONIK: Formulated to lift and structure. It boosts vibrant acidity, giving washed or light-roasted coffees a crisp, juicy, and intense profile.  

  • JAMM: Formulated to add richness and weight. It accentuates lingering sweetness and creates a creamy mouthfeel, making it ideal for rounding out sharper extractions.  

  • LYLAC: Formulated to reveal delicate aromatics. It softens aggressive edges to let elegant, floral, and complex characteristics shine with a silky texture.  

  • KONFLUX: A specialised blending and testing tool designed to smoothly integrate different mineral characteristics, letting you experiment with custom balances  (available separately).

How to Use Them: Two Easy Methods

The beauty of the Apax Lab system is its flexibility. You do not need a science degree to get barista-championship quality water at home.  


1. Pre-Brew Mineralisation

Start with distilled or reverse-osmosis (demineralised) water. Add 3g to 4g of your chosen concentrate per litre of water. Shake well and brew as normal.

2. Post-Brew Seasoning (The Easiest Entry Point)

If you want to rescue a flat cup or tweak a fresh espresso on the fly, you can add the drops directly into your brewed coffee:  

  • Espresso (40ml): 1 to 2 drops  

  • Filter Coffee (200ml): 5 to 10 drops  

  • Milk-based Coffee (150ml): 3 to 6 drops  

You can use the profiles individually or blend them together (e.g., combining TONIK and JAMM) to engineer your own ultimate coffee water.
